I {heart} cheese so much it is ridiculous! I have a big block of Asiago cheese in my possession and couldn’t decide what my first recipe would be. Asiago cheese with its salty strong flavour stands up well to making a warm dip and that’s where this recipe idea started. I love hot spinach dips so that seemed like a good combination. I had my co-workers be my taste testers and they ate every last bite of the dip, so I would say this dip was a winner!
This hot spinach and Asiago dip is delicious served with crackers, baguette, pita crisps or tortilla chips—really you can’t go wrong! I tried baking it in the oven the first time and then I tried serving it in a mini slow cooker and both were yummy!!! The oven baked did get all golden and had a nice little crust to the top which was divine but I think if you are serving over a longer period of time the slow cooker is the way to go. The recipe makes more than a full pot for the slow cooker so I just topped it up a few times through out the night.
- 1 (8oz) package of cream cheese, softened
- 1/2 cup mayonnaise
- 1/2 cup Greek yogurt
- 2 cups grated Asiago cheese
- 2 teaspoons of Epicure Herb and Garlic dip mix (or similar spice)
- 2 cups chopped fresh spinach
- 1. Preheat oven to 350 degrees
- 2. Combine the cream cheese, mayonnaise, Greek yogurt and the Herb and Garlic mix. Add the Asiago cheese and spinach. Spread the mixture into a 8 1/2 x 10 baking dish.
- 3. Bake in the oven until the dip is bubbling and golden, about 20-25 minutes.
- Dip can also be made and served in a mini dip sized slow cooker.
- Serve with crackers, baguettes, pita crisps or tortilla chips.
